To prepare grated daikon(Japanese radish) for tempura or maybe soba or udon, this is the item you need. This is a Banko ware grater used to grate vegetables like daikon or Japanese yam, yamaimo. 

The lid is covered with holes with small thorn-like spikes lined in between the holes. And the lid is placed over a round rectangular bowl that catches the grated vegetables and its natural juices. The bottom has a non-slip finishing that prevents the bottom from moving when placed on a wet cloth when grating. 

Grated daikon tends to be soggy and mushy with the fresh flavor of daikon being lost, but with the Nichijou-Sahanki Daikon Grater, you can easily make fluffy grated daikon with just the right amount of moisture and texture.

To prepare airy grated radish, place the grater on a wet cloth, secure the bottom and the lid with one hand and then move the ingredient back and forth on the lid over the small spikes.

One point of caution is to stop grating when the size of the vegetable becomes small. The spikes are fairly sharp to finely grate the vegetables, so do not get your fingers too close to the spikes when grating. 

If you take a closer look, you will notice that one side of the lid has smaller holes along with smaller spikes. You can use this part to grate smaller items like sliced fruit or ginger.

Banko ware is sturdy and easy to care for, and the black shine and the simple shape of the grater makes it an item that can be placed on the table for a Japanese style meal. Functional yet stylish, the key features of Nichijou-Sahanki.

About BaNKO ware

Yokkaichi Banko ware is a ceramic ware produced in Yokkaichi City, Mie Prefecture. Since ancient times, it has been used to make daily necessities such as tea bowls and plates, as well as works of art such as vases. Today, Kyusu teapots and earthenware pots are representative products of Banko ware, and earthenware pots in particular account for 80% to 90% of all earthenware pots produced in Japan.

Yokkaichi Banko ware is characterized by the excellent heat resistance due to the ceramic clay used. The clay used for earthenware pots is mixed with about 40% lithium ore called petalite, which has a high heat resistance. This technique is patented by Yokkaichi Banko ware and cannot be seen anywhere else.
