Akari’s Recipe: Soft Egg Blanket Rice Bowl

Some recipes are named exactly as they feel. In this dish, eggs drape over the rice like a blanket settling over someone asleep: soft, warm, and gently weighted. Culinary expert Hasegawa Akari wanted it to feel that way. I set out to create something that felt like being taken care of, she explains. You wake up a bit tired, you don’t want to think too hard, but you still want something that feels a little special.

The technique used in this egg recipe is closer to tenshinhan, a fluffy, savory Japanese-Chinese omelette served over rice, than to tamago kake gohan (TKG), the beloved dish of raw egg stirred into hot rice, though it shares that dishs ease and directness. The egg is cooked over low heat until thick and just set: not runny, but not rubbery either. It puffs up softly. The ham underneath adds a gentle savoriness, and it all settles over the rice with a kind of quiet satisfaction.

Its equally at home for breakfast as it is for a weekend lunch. Served in one of MUSUBI KILNs porcelain deep plates, it becomes the sort of meal youll want to make again the next day.

Ingredients (Serves 1)

  • 2 eggs
  • 2 slices of ham or bacon (0.6–0.7 oz / 18–20 g)

  • 3 Tbsp water

  • ½ tsp soy sauce

  • 1 pinch of salt

  • 2 tsp sesame oil

  • 1 serving of cooked rice

  • Dried parsley, to taste

  • Chopped anchovies or diced tomato with Parmesan cheese, optional

Instructions

Step 1. Prepare the Egg Mixture

Finely chop the ham. Crack the eggs into a bowl and beat them. Add the ham, water, soy sauce, and a pinch of salt, and whisk well to combine.

Step 2. Add the Egg Mixture and Cook

Heat sesame oil in a small frying pan (about 7 inches / 18 cm in diameter) over medium heat. Pour in the egg mixture and cook quickly into a flat, even layer.

Step 3. Drape Over the Rice
Serve the rice on the plate. Gently lay the cooked egg on top, draping it over the rice like a cozy blanket.

Step 4. Finish and Serve
Finish with a crack of black pepper and any of the optional toppings you like.

Tips:

  • Bacon can be substituted for ham.
  • Try mixing a little cheese into the egg for a richer flavor.
