A Summer Energy Boost Meal: Karaage Recipe
Revive your energy this summer with crispy karaage in garlic-honey marinade and chilled tomato in wasabi soy dressing.

The key to staying positive, energized, and healthy through the intense summer heat can often be found at our daily dining table. During the hot summer months, when energy is easily depleted, we naturally crave bold flavors that give us an extra boost. In this article, we introduce a delightful Japanese meal that revives both body and mind: crispy karaage (Japanese fried chicken) paired with refreshing chilled tomato with wasabi soy dressing—a perfect summer combination.
Garlic and honey add depth and richness to the karaage marinade, while a touch of wasabi in the dressing brings a refreshing kick that stimulates the appetite. Although the main ingredients are simple and familiar, these seasonings transform an everyday home-cooked dish into something truly special. From the moment the chicken begins to sizzle and the aroma of soy sauce fills the air, an irresistible dining experience begins.
Here, we’ll guide you through the step-by-step process of creating a vibrant meal that will brighten your summer table.

Karaage Japanese Fried Chicken Recipe
Ingredients (Serves 2)
- 1.1 lb (500 g) chicken thighs
- 4 Tbsp all-purpose flour
- 4 Tbsp potato starch
- Frying oil, as needed
Marinade:
- 2 Tbsp soy sauce
- 2 Tbsp sake
- 1/2 Tbsp honey
- 1 tsp grated garlic
- 1 tsp grated ginger
- 1 tsp sesame oil
Garnish:
- Black pepper, to taste
- Finely julienned scallions, optional
- Deep-fried shishito peppers

Instructions
1. Cut the chicken into bite-sized pieces. Mix all the marinade ingredients in a bowl and rub the marinade into the chicken until evenly coated. Cover with plastic wrap and marinate in the refrigerator for 20 minutes.

2. Coat the chicken generously with the mixture of all-purpose flour and potato starch.

3. Heat the frying oil to 350°F (180°C) and fry the chicken for 3 to 4 minutes. Remove the chicken and let it rest on a wire rack for 3 minutes.

4. Fry the chicken again in the same oil at 350°F (180°C) for 1 minute.

5. Place the fried chicken on a plate. Sprinkle with black pepper and garnish with finely julienned scallions and deep-fried shishito peppers, if desired.

Tips:
- Adding honey helps keep the chicken moist and juicy.
- Potato starch helps create a crispier coating, but you can also use all-purpose flour alone.

Chilled Tomato with Wasabi Soy Dressing Recipe
Ingredients (Serves 2)
- 1 tomato, well chilled
- Broccoli sprouts, as needed
Wasabi soy dressing:
- 1 tsp wasabi
- 1/4 tsp sugar
- 1/4 tsp salt
- 1 Tbsp vinegar
- 2 tsp soy sauce
- 2 Tbsp olive oil

Instructions
1. Combine the wasabi, sugar, salt, vinegar, and soy sauce in a bowl and mix well. Add the olive oil and whisk thoroughly.

2. Cut the chilled tomato into bite-sized pieces. Trim off the roots of the broccoli sprouts.

3. Arrange the tomato on a plate and drizzle with the dressing.

4. Top with the broccoli sprouts and serve.
