Team Musubi had the privilege of visiting Tokyo’s venerable Takano Fruits Parlor Shinjuku Honten and exploring the world of fruit sandwiches. Since its founding in 1926, Shinjuku Takano Fruits Parlor has been devoted to merging the exquisite flavors of fresh fruit with the art of presentation, establishing itself as a pioneer in Japan’s fruit dessert scene.

Takano Fruits Parlor Shinjuku Honten: A Legacy of Japan’s Fruit Desserts

In mid-March, Tokyo finds itself in the early embrace of spring. Although the wind still carries a hint of winter’s chill, the tender buds emerging on the branches along the roadside serve as a gentle reminder that the season is slowly unfolding.

Shinjuku, vibrant and full of life, stands out as a dazzling beacon that attracts visitors from around the globe. This time, Team Musubi ventured to Takano Fruits Parlor Shinjuku Honten, conveniently located near Shinjuku Station, to experience the allure of the fruit sandwich at this historic establishment—an iconic venue that has grown alongside Shinjuku for about 100 years.


Eager to capture the process behind the creation of their fruit sandwiches, we arrived early in the day. Stepping out of Shinjuku Station, it took less than five minutes to spot the sophisticated silver storefront of Shinjuku Takano Fruits Parlor. To our surprise, the backdrop of the silver sign was adorned with a delicate pattern reminiscent of a melon's surface, with the “o” in “Takano” cleverly shaped like the fruit itself, setting an unexpected yet charming tone.

While waiting at the entrance of the staff corridor, we were greeted by a subtle infusion of fresh, sweet fruit aromas carried by the brisk, warm breeze. It soon became clear that crates of just-delivered seasonal fruits had just been unloaded from a truck. This sensory preview heightened our anticipation for the tasting experience that lay ahead.

Walking through the staff entrance for the first time felt like stepping into Wonderland alongside Alice—a moment filled with sheer joy. In stark contrast, the chefs in the operations area were already at work, dressed in professional attire and preparing ingredients. They inspected every piece of fruit with precision, all while getting the day's cream ready for use.

Before long, Akiyama Tomonori, our gracious host, approached with a welcoming smile and began to share insights about the inner workings of the kitchen. Our tour primarily focused on the fruit preparation area, a space that balanced both comfort and sophistication. The room’s design, with its expansive windows, offered a captivating view of the bustling Shinjuku streets below. Even the nearby white, oval wall design evoked the image of silky cream piped onto a cake, adding to the ambiance of refined artistry.

The window display of delectable treats left us spoilt for choice. Exquisitely crafted food displays featured parfaits so lifelike they seemed ready to be enjoyed.

Beyond these replicas, a stunning arrangement of fresh fruit caught our eye—so elegantly presented that, at first glance, we almost mistook it for another showcase piece.


Next came the moment we had all been eagerly anticipating: the creation of fruit sandwiches.

Crafting the Perfect Fruit Sandwich: A Masterclass in Precision

The restaurant had specially prepared a display counter for us, ensuring that the operational area remained immaculate. The fruits chosen were kiwi, banana, mango, and strawberry—a timeless combination that has proven its charm over the years.

In the hands of the experienced chef, the specialized knives seemed almost alive. To onlookers, it appeared as if the blade gently skimmed over the surface of the fruit like a streak of silver, letting the peel to gracefully shed in delicate, thin layers. When handling the soft, juicy mango, he showcased remarkable knife skills—sliding the blade between the skin and flesh before rolling the fruit to extract an intact slice in one smooth motion.

Each fruit was meticulously cut into uniform cubes. As he worked, the chef explained that achieving the right balance of sweetness and tartness is essential for a memorable fruit sandwich. That’s why he paired the natural sweetness of mango and strawberry with the tangy brightness of kiwi. Given the banana’s bold flavor, its portion was carefully measured to enhance rather than overpower the overall taste. This thoughtful combination creates a refreshing, harmonious blend that lingers on the palate.

The other two essential components of a fruit sandwich are the cream and the bread. According to the chef, he prefers whipped cream made primarily from plant-based fats because its light texture and subtle flavor complement the freshness and natural sweetness of the fruit without overwhelming them. As for the bread, he opts for thin slices that not only offer a gentle wheat aroma but also accentuate the textures of both the fruit and the cream.

Finally, all the elements are brought together, like painting a vibrant design on a canvas. Gentle yet firm pressure holds the sandwich in place before trimming the edges to ensure every bite is soft, juicy, and sweet.

The final presentation isn’t the typical triangle; instead, it’s carefully arranged into two trapezoids and three rectangles. This distinctive shape makes the sandwich easier to hold and eat while showcasing the fruit’s charm from every angle.


We couldn’t wait to take our first bite. The moment the sandwich touched our lips, the soft, wheat-scented bread released its inviting aroma, followed by a burst of juicy fruit mingling with silky, velvety cream—a truly unforgettable combination.

Like the seasons themselves, fruit sandwiches embody a fleeting beauty meant to be savored. From the selection of vibrant seasonal fruits to the deft hands of master chefs, each step reflects Japan’s deep appreciation for nature’s treasures.
