This petty knife stands out with its distinctive kurouchi finish, defined by a textured, blackened blade surface. A natural black oxide layer is formed on the iron base, enhancing resistance to rust while preserving the character of traditional forging. The hammer marks left on the blade vary from piece to piece, giving each knife a strong, individual presence and a sense of authenticity rooted in handcraft.
At the core of the blade is VG10 stainless steel, known for its keen sharpness and reliable edge retention. Thanks to the steel’s high hardness, the blade enters ingredients smoothly with little effort, maintaining a consistent, controlled cut throughout extended use.
