5 Simple Steps in This Japanese Recipe: Sweet and Spicy Tofu Bowl

Here's a recipe for Japanese home cooking by culinary expert Hasegawa Akari. The second installment is the Sweet and Spicy Tofu Bowl. Simply simmer tofu with seasonings, and you'll have a delicious bowl ready. Be sure to try it out.

Ingredients (serves 2): 1 block of tofu (300 g / 10.6 oz), 3 g (0.1 oz) kombu (dried kelp),  50 ml (1.7 oz)  sake (Japanese rice wine),  50 ml (1.7 oz) water,  1 1/2 Tbsp soy sauce, 1 1/2 Tbsp mirin, 1/2 tsp sugar, 1/4 tsp salt,  Two servings of rice, Julienned ginger and chopped green onions, as desired1. First, cut the tofu into four equal pieces. Then, slice each piece into half horizontally.2. In a frying pan, combine the sake, water, soy sauce, mirin, sugar, and salt. Mix well. Then, add the kombu and tofu.3. Cook over medium heat. Once the ingredients come to a boil, cover with aluminum foil as an otoshi buta (drop lid) and simmer for 10 minutes.4. Once the liquid is reduced down to roughly a third of its initial volume, turn off the heat. 5. Serve the rice into individual bowls. Gently top with the tofu, drizzling it with the reduced liquid. Finish by garnishing with julienned ginger and green onions.
