Since chefs typically use very fresh ingredients to prepare the dishes on the counter, the term has gradually come to imply fine dining. Our table setting includes some of the representative dishes of kappo cuisine, the otoshi “appetizer,” the agemono “fried dishes,” sushi, and desserts. This is also considered one of the authentic expressions of traditional Japanese culinary culture.
